Friday Night Recipe: London Broil with Mushrooms in Red Wine













1-2 lbs London broil, depending on how many servings you want

2 cups of red wine, I love Merlot, make sure it has a rich flavor that you fancy
(I'm getting into the spirit of London here...), a wine you would enjoy drinking. If you're not sure, sample some, but try not to drink too much before cooking!

2 cups beef broth
1 pound sliced shiitake mushrooms, I find these work best with beef, steaks, etc.

1/2 cup of minced fresh parsley

2 tbsp. minced shallots

1 tsp. dried, crushed rosemary

1 can canola oil cooking spray


1. Marinade time! Put the London broil, mushrooms, wine, parsley, rosemary, and shallots in a plastic bag and let sit in your fridge for an hour.


2. Place only London broil in a large skillet sprayed with canola oil and cook at medium temperature until it is cooked to your taste. Don't forget to study the meat closely. Put London broil
aside in large plate.


3. Using the same skillet, pour your marinade and cook at low temp. for 15 - 20 minutes--it becomes the sauce.

4. Pour sauce over the London broil. Add a little bit of fresh wine to the top to enhance flavor.


Make it fun-- With sides like sweet potato wedges or seasoned frites, asparagus and zucchini, rice pilaf, and a glass of the wine you used, of course!
